Many processed foods - including wheat flour - are bleached to make them white. Why do manufacturers do this? Because we have come to associate the color white with purity and cleanliness, and they figure this will make their products more attractive to consumers. Unfortunately, studies show that alloxan, a chemical that is used to bleach flour, also destroys the beta cells in your pancreas. Here's what happens: The alloxan breaks down into uric acid, which causes free radical damage to the DNA of the beta cells. Eventually, those beta cells begin to die ... and so does your ability to produce insulin. This condition is known as Type-2 diabetes. To protect your pancreas and avoid developing diabetes, stop consuming products made with white flour. If you occasionally eat bread or pasta, choose those made from whole grain.
