I must confess that I'm a cheesecake freak. I just love cheesecakes. Especially the cheesecake I bake at home. Unbelievably, my cheesecake meets all the criteria of my anti-aging program. Last week I baked my best cheesecake ever. It was the best because for the first time I didn't use artificial sweetener as Equal. I used a natural sweetener you might have found in chewing-gums. This is Xylitol. The taste and the texture were far better than any artificial sweetener (like NutraSweet or Splenda). I urge you to stop using sugar today and substitute it with xylitol. What is Xylitol? Xylitol is the commercial name for a naturally occurring sugar called xylose commonly derived from corncobs and birch trees. It is like many other sugars, but with a significant difference - the xylose molecule contains only 5 carbon atoms rather than the 6 of most other sugars. This molecular difference is the key to xylitol's beneficial qualities both as a food source and as a bacterial inhibitor for both medical and dental use. Xylitol's Nutritional Story Xylitol has the sweetness of a sugar, yet has 40% less calories. It lacks the after-taste of the artificial sweeteners. Some of you may see it as inferior compared to Splenda and NutraSweet with almost zero calories. But if you have the Anti-Aging Fitness Program you already know that what matters are insulin levels. So listen carefully. Xylitol is metabolized without insulin so it creates a significantly lower glycemic index of 7. Good news for diabetics. Good news for sweet lovers. I haven't found it in supermarkets yet, but you can check your supermarket especially if they have a diabetic food department .You probably will find it in most health food shops. I'm giving you my special secret cheesecake recipe. It takes less than 10 minutes to prepare this cake. So give it a try and if you like it, please let me know. Ingredients: 4 Philadelphia 8 Oz. Fat-Free Cream Cheese (softened) 1 Small fat free or light sour cream container 4 eggs 1 spoon of Vanilla extract 1 cup of Xylitol (or Equal - NutraSweet) 1 cup of crushed sugar-free Oatmeal Cookies (recommended brand - Joseph's) (1 Tbsp. fresh lemon juice - if you like the lemon aroma) (1 tsp. grated lemon peel- if you like the lemon aroma) Instructions: BEAT cream cheese, Xylitol, lemon juice, lemon peel, light/fat-free sour cream and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. SPRAY with fat free cooking spray (like PAM); onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. SPRINKLE bottom with crumbs. POUR cream cheese mixture into prepared pie plate. BAKE at 300°F for 45 minutes or until center is almost set. Cool. Refrigerate for 3 hours or overnight. You can also consider topping with fruit or drizzle with sugar-free jelly.
